homemade yellow split pea soup (vegan)


If you read yesterday's post then you know about our herbal stock powder recipe that we add to most of our tasty homemade soups.

By using the stock powder this pea soup is so quick and easy and instantly fills the house with the cozy smells of simmering homemade soup!

This is all you need:

1 tbsp olive oil
1 large onion, diced
1 cup dried split yellow peas
6 cups water
3 tbsp stock powder
2 potatoes, diced
2 carrots, diced
salt to taste

~ In a large saucepan saute onion in oil until soft.
~ Add dried peas, water and stock powder.
~ Bring to a boil, cover and let simmer about 1 hour or until peas are mushy.
~ Add diced potato and carrot and bring to a boil again.
~ Simmer another 15 mins or until vegetables are soft.

This makes enough to feed our family of 4 and usually lunch for me the next day! ;o)
